Pinto Beans Recipe - Texas Pork and Beans Recipe

Here's a tasty pinto beans recipe we picked up in Texas using pink or pinto beans with belly pork, tomatoes and seasonings.

Ingredients per person:

100gm dried pinto beans
500ml water and stock cube or liquid meat stock
1 strip of lean belly pork diced into cubes
1/2 teaspoon salt if no stock cube
1/2 teaspoon paprika or other pepper sauce
1 to 2 tablespoons bacon drippings, oil or butter
1/2 medium onion, chopped
1 clove garlic, minced
1/2 can or 4 ripe tomatoes, chopped
1/2 teaspoon dried or 1/4 cup finely chopped fresh parsley
1/8 teaspoon chili powder, or to taste

Preparation:

In deep stock pot or pan, cover beans with cold water and and let soak overnight.

Next day, drain and remove beans to side.

In pan fry off the meat, onions and garlic until the meat is sealed.

Add the paprika and chili powder and stir before adding stock.

Re-introduce the beans and bring to a boil; reduce heat. Cover and simmer for 1 hour, or pressure cook for 30 minutes, or until beans are tender.

Add the tomatoes and parsley and cook for a few minutes more.

This Pinto Beans Recipe was served to us with corn bread / corn muffins but we cover the mixture with dumplings but can be accompanied by potatoes, your way, plain scones, cobblers, rice or noodles etc.
